Based in Bussolengo, near Verona, Dennis and Anna Borchia launched their wine project in January 2023 after more than a decade of research and preparation.
Their vineyards are planted at a high density of 10,000 vines per hectare and are managed entirely by hand, from pruning through to harvest. Grapes are carefully picked into 10 kg crates and pressed using a manual 200 kg press. Fermentation takes place in 350 L tonneaux — previously used at Pierre-Yves Collin-Morey in Burgundy — and stainless steel tanks, with no racking during élevage. The wines remain on their fine lees until bottling, building texture, depth, and complexity.
Their work focuses primarily on disease-resistant PIWI varieties, including Bronner, Johanniter, Souvignier Gris, and Julius. Alongside these, they continue to cultivate Corvina and Sangiovese on older family-owned vineyards while gradually transitioning these parcels to PIWI varieties.
Annual production amounts to just a few thousand bottles. By keeping production deliberately small, Dennis and Anna are able to focus on uncompromising quality, environmental sustainability, and a minimal-intervention approach that allows each wine to express itself as naturally as possible.
